Well, I think a one year course would do fine,
but if you really want the red seal, 2 years,
ask yourself, how important is the red seal to you or your career assuming you wanna be a chef
if it's really important, go for it, if it's just something you want, not something you need, then perhaps you should just end it quick and get into the real work,
of coz, if you're not in a rush to work, no commitments to take care of, and your family is pretty comfy to support your education, go for two years, relax, enjoy a bit, coz it' ain't pretty when you start to work already, take your time to happily indulge in your education, make the most from it,
it all depends on you, on your situation,
one of my friends took it before, he enjoyed it pretty much, got the red seal thingy too i think, and now he's working as a chef, a pretty good one too, ;)
