How to cook

For me, the best approach to cooking is to start with the best fresh produce you can, and do as little as possible to it which would be likely to bugger it up.

Don't overboil, tenderise, pulverise, dip in batter, smother with spices, absolutely don't deep fry, and especially don't ever do anything whatsoever which involves a microwave.

I like to lightly sautee or gently steam just a few fresh ingredients to bring out the natural flavour and texture.

I believe too much of anything is always a bad thing, especially with cooking. I'm not an expert on this, but I know that overboiled stuff, overspiced stuff, or anything overmade would taste awful.

Like you, I prefer sauteeing my ingredients, especially vegetables, with light butter or olive oil. Or just steam them.

How do you cook meat and fish? I usually grill or steam them. I deep-fry chicken, though, but i cover it with breadcrumbs first. I also try to drain the oil and fat away with napkins and a strainer before I serve them.

Cooking meat and fish

I like to lightly pan fry meat or fish, maybe in a little oil, or barbecuing is also good. In Australia, we're very big on barbecuing, even in winter! Do you do barbecues in the Phillipines?

Do you deep-fry the whole chicken, or just pieces? I've heard of an American recipe where they deep fry a whole turkey! (in a VERY big pot, presumably, and with a fire extinguisher on hand)

yea, we do barbecues here..
some stores sell barbecues..
i mean, they'd do the cooking and we'd do the eating..
and barbecues are sold at very low prices..

u should come visit the philippines..
we've got lots of delicious food here..
filipinos cook well, y'know..
well, maybe xcept for me.. :D
coz i don't cook..

My cooking is so asian influenced with balanceing of flavors. The only oil I use is coconut oil. If I don't have coconut oil then I don't cook. Coconut oil smells so great and litely perfumy and the food taste just as good. I used to just use olive oil but now every oil taste like poison to me. I don't deep fry anything anymore. Back in the olive oil days I used to barbque almost every day. Now it's the wok for me.

what's the difference between coconut oil and olive oil anywayz..?

Olive oil comes from the olive (the little brown or green fuits popular in mediterranean food)

Coconut oil comes from the coconut (the big brown husky round hard fruit that grows atop palm trees).

I'm kind of surprised that someone from the Philippians uses olive oil and not coconut oil.

I've read that Phillipino people look so young and live so healthy because of coconut oil.

Wok cooking

I definitely should come to the Phillippines - it's not that far, and I know the food is some of the best in the world.

Everyone in Australia loves Asian food - I do a lot of wok cooking at home.

Isn't coconut oil high in saturated fat? This is the main reason a lot of people use olive oil for cooking, because it's much healthier.

The big problem with olive oil is that it begins to smoke and burn at a relatively low temperature - so it's great for making pasta sauce or a stew, which you don't have to cook on such a high heat, but no good for a quick stir fry, which needs to be cooked at thermo-nuclear fusion temperature. Olive oil also catches at a fairly low temperature, so if you're not careful, you can quite easily set your kitchen on fire. For wok cooking, I always use peanut oil, which doesn't burn at high temperatures.

Is coconut oil good for high temperatures, or does it burn?

Coconut oil has low smoke point like olive oil. My stove doesn't get so hot so I don't have to worry. I use coconut oil for all my cooking.

Their are a lot of misconceptions about coconut oil. There is a Doctor who is an expert on it and he wants to but out a book but the vegetable oil manufacturers stop him to keep their billion dollar industry (misinformation campaign just like the global warming one). I'm not the expert guy so you may want to do a search on coconut oil.

Coconut oil is 95% saturated. Which is good because cancer causing chemicals and other chemicals attach right to unsaturated oil and stay in your body for years!!! Not too many people know that. Unsaturated oil doesn't clog ateries cholesterol does. Coconut oil has a natural chemical that increases your matabolism, meaning you burn more fat. Coconut oil has like 20 other health benifits. It's called world's healthiest oil. Not to mention is tastes best too.

The world starting with USA starting using unsaturated oil because the paint industry didn't want to use it for the paints anymore. So they started this campain to say that unsaturated oil is much healthier. Actually unsaturated oil it's what is mostly causeing cancer, heart attacks, strokes, obesity.

The pork industry did a test in the USA in the 1950's and tried to fatten up pigs quickly using cheap coconut oil. The pigs lost weight and were hungry more often.

i'd never trade filipino food for anything else..
and the best beaches are here too..

I'm also not very fond of cooking my own meals. Maybe because I've always had someone to make them for me and all I've ever did is simply eating them :)
Nevertheless I know how to make a couple of things that require a frying pan and a bit of patience :)
