I believe too much of anything is always a bad thing, especially with cooking. I'm not an expert on this, but I know that overboiled stuff, overspiced stuff, or anything overmade would taste awful.
Like you, I prefer sauteeing my ingredients, especially vegetables, with light butter or olive oil. Or just steam them.
How do you cook meat and fish? I usually grill or steam them. I deep-fry chicken, though, but i cover it with breadcrumbs first. I also try to drain the oil and fat away with napkins and a strainer before I serve them.
