Low-carb breakfast ideas

I'm going low-carb, but breakfast is the hardest meal for this way of eating. Does anybody have any great low-carb recipes for breakfast? I really miss quiche....

hm, well, eat many fruit, but not bananas! apples are really healthy and have small numbers of calories, same case with grape !
when you eat an apple it really stops your hunger! or just drink coffee after whatever small portion you eat, you wont feel hungry at least till lunch!

I see no reason why you should stop eating quiche. Here is a low carb. quiche recipe I found on www.lowcarb.ca

Spinach Bacon and Mushroom Quiche

By : Atomhockeymomm....I got this from Barbo's site



-------- ------------ --------------------------------
4 large eggs
3/4 cup cream
3/4 cup water
2 tablespoons melted butter
1 tablespoon flour
1 package spinach -- cooked, drained
1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons sour cream
1/2 CUP mushrooms
1/2 cup chopped onion -- sauteed
6 slices bacon -- crisp, crumbled
1/2 cup shredded swiss cheese
3 tablespoons grated parmesan cheese
- Blend the first 5 ingredients together.
-Add remaining ingredients.
-Pour into a pan sprayed 10" pie plate or 8 jumbo muffin tins.
-Bake at 375*F for approximately 40 minutes.
-8 servings @ 3.5 minus 0.4 gr. fiber= 3.1 carbs & 8.1 gr. protein per slice.


this doesn't have a crust but its got all the good stuff.
