Sweet and sour potato curry
Preparation time : 10 - 15 minutes,
Cooking time : 25 - 30 minutes
Serves : 4
Ingredients
50 ml / 2 fl oz oil
1 teaspoon black mustard seeds
1 teaspoon cumin seeds
6 medium potatoes, cubed
2 teaspoons ground coriander
1 teaspoon turmeric
1 teaspoon chilli powder
2 teaspoons salt
4 teaspoons brown sugar
300 ml / ½ pint water
1 x 75 h / 3 oz can tomato puree
3 tablespoons vinegar
5 – 6 sprigs fresh coriander leaves, chopped, to garnish
Method
Heat the oil in a pan, add the mustard and cumin seeds and fry the until they pop. Reduce the heat and carefully add the potatoes. Add all the remaining ingredients and stir well. Cover and cook over a low heat until the potatoes are tender and a large amount of thick sauce remains in the pan. Garnish with chopped coriander and serve.
