Mixed vegetables
Preparation time : 25 minutes,
Cooking time : 25 – 30 minutes
Serves : 4
Ingredients
2 – 3 tablespoons oil
1 medium carrot, diced
1 medium onion, diced
1 medium potato, diced
1 small cauliflower, broken into florets
1 tablespoon ground coriander
1 tablespoon garam masala
1 teaspoon chilli powder
Salt
5 – 6 sprigs fresh coriander leaves, coarsely chopped
Method
Place the oil in a large pan over a low heat. Add all the ingredients and stir well. Cover and cook for about 25 – 30 minutes until the vegetables are tender. Stir occasionally, making sure each time the lid is lifted that no water falls back into the vegetables. Serve hot or cold.
