Egg masala

Cooking time : 10 – 15 minutes

Ingredients
8 large eggs
5 – 6 sprigs fresh coriander leaves, chopped
1 medium onion
4 medium tomatoes, chopped
1 tablespoon ground coriander
1 teaspoon chilli powder
Salt
50g / 2 oz butter
Method
Break the eggs into a bowl and beat well. Add all the remaining ingredients except the butter, and mix well. Heat the butter in a frying pan and add the egg mixture. Stir-fry, braking up any lumps of cooked egg, until the mixture resembles dry scrambled egg. Serve hot with triangles of toasted bread.
