Preparation time : 15 minutes, plus 30 minutes soaking time
Cooking time : 20 – 25 minutes
Serves : 4

Ingredients
50g / 2 oz tamarind
6 tablespoons hot water
4 tablespoons oil
675g / 1 ½ lb monkfish or other firm white fish, cubed
Flour for dusting
1 onion, chopped
4 green chillies, finely chopped
2 garlic cloves, crushed
1 teaspoon ground cumin
½ - 1 teaspoon chilli powder
Salt
1 tablespoon vinegar

Method
Soak the tamarind in the water for 30 minutes, then strain squeezing out as much water as possible. Discard the tamarind and reserve the water. Heat the oil in a large pan. Lightly dust the fish with flour, add to the pan and fry quickly on both sides. Remove from the pan with a slotted spoon and set aside. Add onion to the pan and fry until soft and golden. Add tamarind water, chillies, garlic, cumin, chilli powder and salt to taste and cook for 10 minutes. Add the fish and any juices and the vinegar. Simmer, uncovered for about 5 minutes; be careful no to overcook.
