Meat puffs

Preparation time : 15 minutes plus 1 hour standing time
Cooking time : 10 minutes
Serves : 4

INGREDIENTS:
3 table spoons self-raising flour
3 eggs, beaten
5 – 6 tablespoons water
225 g / 8 oz minced beef
1 bunch spring onions, trimmed and finely sliced
1 green chilli, finely chopped
1 teaspoon turmeric
Salt
Vegetable oil for frying

METHOD: Shift the flour into a bowl, add the eggs and beat well to combine. Gradually add enough water to make a thick, creamy batter, beating well. Stir in the minced beef, onions, chilli, turmeric and salt to taste; the mixture should be like stiff porridge. Leave in a warm place for 1 hour. Heat about 1 cm / ½ inch depth of oil in a frying pan. when really hot drop in spoonfuls of the meat mixture and fry on each side for 2 minutes. Drain well and keep warm while cooking the remainder, adding more oil as required. Serve hot.
