Asian fish meal
This is a slightly more exotic one-dish meal. It’s just as easy to prepare, cook, and clean up, however! Put rice in the rice cooker and your meal will be ready in minutes.
Ingredients:
4 Fish fillets
¼ cups Vinegar
3 tablespoons Soy sauce
1 tablespoon Sesame oil
1 ½ teaspoons Fresh ginger, grated
½ teaspoon Flaked red pepper
1 tablespoon Peanut oil
1 clove Garlic, minced
1 package (10 ounce) Fresh spinach leaves, cleaned and stems removed
Method:
1. Combine the vinegar, soy sauce, sesame oil, ginger, and chopped red pepper in a covered glass dish.
2. Add the fish and allow to marinate for twenty minutes.
3. Fry the spinach with the peanut oil and garlic until it is wilted
4. Tear off four squares of aluminium foil. Place spinach in the centre of each, then top with a fish fillet. Pour a little of the marinade mixture over each fillet, then seal.
5. Grill over medium heat for fifteen minutes.
