Pizza from scratch. don't worry it's easy.

Making pizza is easy if you have proper tools. You need.

Pizza stone.
-Sells on ebay around the world.
-Could line your oven tightly with clay bricks if you can't find the stone.

Stand mixer with dough hooks.
-Or strong arms that can kneed the dough for 10 minutes.

Pizza peel or shovel.
-cardboard works as good but doesn't last too long.

Flat work surface
-clean countertop or large bread cutting board

Ingredients

Flour
-Very important to get type 00, or gluten flour, bread flour. No others!

Yeast
-I like the dried kind. You can use the alive cake stuff too.
-Make sure it's new if you have rising problems.

Water
-Tap water which is a little warm.
-If yeast doesn't rise use bottled water. Or get new yeast.

Salt
-Have to add salt or the yeast goes crazy and bread tastes flat.

Sugar
-Not required but makes yeast rise and bread taste better.

Oil
-I stopped using it because I ran out and still tasted ok. Coconut oil is best.

Sauce
-I use spaghetti sauce.

Spices
-Oregano is a must. Garlic, and onion is optional.

Cheese
-mozzarella is best. can use cheddar, ghoda, feta, or your favorite.

Meat or veg topping of your choice.

Corn/Maise flour
-For dusting the board and peel/shovel
-flour will taste less good.

On to the receipe. Makes enough for 2 small pizzas. Add water if you want more. I make 1 small pizza per person.

200ml of warm water in the mixer bowl
small amount of yeast.
a little sugar. couple of grams.

Now let that mix with dough hook.

then add a couple coffee cups of flour in.

then add a few grams of salt.

then add more flour 1/2 coffee cup at a time till the dough is a little sticky but you can still handle it.
-It will be hard to hand stretch out if it's not a little sticky now.

make sure you have ran in machine for 10 minutes. not more or less.

Preheat oven now with stone in. I preheat max temp of my oven 300c top and bottum heat. Turn your oven fan off if you have one.
-my stone is like 3-4cm thick. with a thin stone you may preheat less.

let rest and rise for 2 hours.

push dough down and put on lightly floured board.

Divide into two balls about the size of a large orange. If dough is left save for tomarrow in a plastic bag. you ran roll it out and fry them in oil for a breakfast treat. top with powdered sugar.

once you divided into ball push down and let rest for 30 minutes.

then dough should be easy work with. if not let rest more.

then push your palm of you hand into the middle. make enough room so that you could fit your closed fist under it.

then pass from fist to first till you have desidered thickness.
-I like a 2-3 mm. in middle and 6-8 or so on crust edge.

Place pizza on corn floured pizza peel/shovel.
-make sure make sure make sure you can move it easy at this point.

then sauce the pizza with the tablespoon.
-make sure all the pizza has sauce including the rim.

add spices

could add topping now if you fear they will burn and you don't like that.

could add cheese now

then could add your meat or veg. toppings

make sure all this time that you can move the pizza. important.

open door. slide pizza off till it catches on stone. slight flick of your rist and you pull the shovel out and the pizza is all the way on the stone.

bake till the crust is slightly brown and cheese is melted and bubbled for a while. not black. don't turn pizza too much or you'll tear the bottom. I don't move mine at all.

Their you go. You just made a better pizza than you could buy. You'll get better if not. Just think of all the money you are saving. I calculate I spend no more than 1/2 dollar a pizza. I buy the cheese, flour in bulk restaurant size. cheese can be frozen. flour seeled in a thick garbage bag.

enjoy!

any questions?

Glad to hear you tried it. Don't worry. It will get easier. I also made pizza myself today. By now I can make in my sleep. Only problem is the fact that it's heats up the house. My dream is to build an outdoor kitchen with pizza oven, stove, wok burner, slushy machine, grill right beside an inground pool.
